Ways to Use Up Leftover Potatoes

Don't throw away those leftovers! What would otherwise be thrown away can be made into another dish, or even save you time on your next meal!

The humble spud can get a bad wrap from a lot of carb bashing out there, but did you know potatoes are the most satiating (most filling) food you can get for how many calories are in them? They're budget friendly too. They're full of nutrients like potassium and vitamin C (along with some protein and fibre!) So you really should be cooking more of them!

So here's some ideas to use them up, if you got a little carried away and cooked more than you can eat in a sitting!

Shepherd's Pie 

Use leftover mashed potato (or make extra in your previous meal, so you can save a step for this one) for your pie tops. 

 

Tuna Patties

boiled/mashed potato in this Tuna Pattie recipe gives it a great texture, and also makes the tuna go further!

 

Frittata

A great way to use all sorts of leftovers - I actually often make extra potato or other vegetables like broccoli so I have them on hand to make a quick breakfast frittata the next day. 

 

Potato Pancakes

Versatile for breakfast, lunch or dinner.

 

Soup

mashed/blended potato in soup gives it a lovely creamy texture. So many options you can try but  potato, leek and bacon is often a winner!

 

Potato Salad

Again another way to get prepped and save some time, because your potatoes are already cold and waiting for you! There's also so many different things you can add to potato salad to mix it up.

 

Breakfast Hash

An easy way to feed a crowd, and a great excuse for a twist on a fry up for breakfast. Again, a meal that's easy to adapt to the ingredients you have on hand.
