Salad Ideas for Spring

All this sunshine, and some lower prices on some veges like cucumber and capsicum have me excited about making some salads again!

Growing up salads were always a sad, boring way to ad vegetables to our diet - think tomato, ice burg lettuce and cucumber 😴😴 - but there's no reason salads can't be an exciting addition to your meal - or even the main event. Check out a couple of these salad ideas for this week's menu...

Mexican Caesar Salad

A lighter version of nachos! Add some grilled meat of choice, or have as it it - easy for each family member to construct how they like (with toppings and sauces - hot sauce, salsa, jelepenos....) 

Apple and Mustard Slaw

Here's a nice twist on a classic. Slaw is another one of those things that was a total snore from childhood - but there's so many different ways to use shredded cabbage - even better, slaw keeps really well for a few days, unlike traditional salads which tend to go soggy.

 

Vermicelli Noodle Salad

Vermicelli is cheap and filling, and the dressing on this salad packs serious flavour punch!

 

Crispy Noodle Salad

Its crispy, its's crunchy, and savoury. You haven't lived til you've had a crispy noodle salad!
