Broccoli is cheap right now, and as a green, cruciferous vege we're loading up and trying to eat as much of it as possible!
Cruciferous vegetables are rich in folate, vitamins C, E, and K, and fibre.
Pretty much the only way we had broccoli growing up was boiled on the side of our plates, but I reckon we can do better....
Stir Fry
My go to thought with stir frys and broccoli as beef and broccoli, and, knock yourself out - but beef is pretty pricy right now. so what about this Chicken and Broccoli Stir Fry recipe? With minimal ingredients, and LOTs of sauce. Or for something a bit different try this Indian Style Stir Fried Broccoli.
Frittata
I've purposely been making extra broccoli and roast veges for dinners recently, to have leftovers to make frittata for breakfast (and get a few extra servings of veg in the day). Super versatile - use whatever cooked vegetables you want (I use leftover roast spuds, kumura, carrot, onions and steamed broccoli), any kind of cheese (cottage, feta, tasty), and of course bacon is great, too. Salads
Broccoli isn't the first vegetable you think of putting in a salad, but it can be seriously good! And now spring is here, it's nice to have some lighter options. Check out these recipes,
